Melon and peppermint iced-lolly

Ingredients:

 

  • 300 g water melon, peeled, chopped and pureed

  • 1 handful peppermint leaves (alternative 1 peppermint tea teabag) Juice of half a lemon

  • Juice of half a lemon

  • A small amount of forest honey (alternative agave syrup)

  • 4 twigs for lolly sticks

  • 500 ml with magnesium mineralized, filtered drinking water

 

Preparation:

 

Boil a tea using the magnesium-mineralized filtered water and the peppermint. Depending on taste leave to infuse, strain and leave to cool. Stir in the watermelon and lemon juice as desired sweeten with some honey or agave syrup to taste. Pour into yoghurt pots, cover with foil and insert the twigs as lolly sticks. Freeze for a few hours.
